Roasted Cauliflower with raisins and pecan nuts.

Inspired by a meal I discovered at the Sky Garden in London. Today I made a roasted cauliflower with pecan nuts and raisins.

Last July, with my Honey, we were in London to celebrate our 6th year together and we went for a meal at the Sky Garden. Such an amazing venue with an incredible view over the city of London. Beautiful meal and an unforgettable memory.

The main course was a big moment for me as I am not a fan of cauliflower and usually avoid eating it, but roasted like this it was just amazing. I have often made cauliflower since, but I really do prefer this vegetable when it is cooked in the oven. The taste is completely different as to when it is boiled. I find the flavors are totally different.

This is the main course as it was served to me at the Fenchurch Restaurant at the Sky Garden. It was served with raisins, capers, pine nuts and germinated seeds. It really was delicious.

This is my version of the roasted cauliflower. It is quite quick to cook . You can prepare the cauliflower whilst the oven is heating and prepard the nuts and fruit whilst the cauliflower is cooking. You need to allow 30minutes for this to be ready to be served. You can serve it as a main course or as a side dish as you wish.

Please be careful when you take this out of the oven, not to serve straight away as the raisins are very hot.
